Smokey Chicken Stroganoff

I used canned mushrooms in this recipe and the little zip lock bags each have 1/4 cup chicken broth in them.  I had in the freezer – leftover from another recipe.  Lemon Pepper is not shown because I didn’t have any.  I used ground pepper and 1/2 tsp. bottled lemon juice.  Pictures also show only 2 chicken breasts.

4 boneless, skinless chicken breasts – can be frozen

1/4 tsp. smoked paprika *

½ tsp. lemon pepper

1 tsp. garlic powder

Place the chicken in crock pot.  Sprinkle with seasonings.

* If you don’t care for the smokey taste of the smoked paprika, you can use regular paprika – although if you haven’t tried smoked paprika, give it a try.  It gives such a rich deep flavor.

1 can 98% fat-free mushroom soup

8 oz. fat-free sour cream

½ cup white cooking wine or chicken broth

Combine soup, sour cream, and wine or broth.

8 oz. sliced mushrooms, fresh or canned

Stir in mushrooms.

Pour over chicken.

Cover – cook on low setting for  about 6  hours.

Remove chicken breasts from the crock pot and slice on the diagonal. Set aside.

1 T. turkey or chicken dry gravy mix

Add gravy mix to the creamy sauce in the crock pot.  Stir to combine.  (This thickens the sauce up a bit.)

Serve over noodles.  Also tastes good over rice or a baked potatoe.

Makes 4 servings
