February 19, 2011

½ Recipe     Full recipe

3-4                    6-8                     frozen, boneless, skinless chicken breasts

¼ cup              ½ cup              butter, melted

1                         1 ½ – 2             envelope – Italian salad dressing mix *

8 oz.                  16 oz.               cream cheese, softened**

7 oz.                  14 oz.              canned chicken broth

Spray crock pot with cooking spray.

Dip chicken in melted butter and then sprinkle with dry dressing mix.

Place chicken in crock pot.

Mix any remaining butter with dry mix dressing mix and pour over chicken.

Cover and cook 3 – 4 hours on high or 6 – 8 hours on low.

Remove chicken and stir in cream cheese until melted.

Add chicken broth.

Return chicken to crock pot and cook another 30 minutes on high.

Serve over rice.

Note:  Have some dry chicken gravy on hand to thicken gravy, if necessary.

* If making full recipe, I would start with 1 ½  envelopes of dressing mix, and add more if necessary

DO NOT use fat free cream chesse!  Really gross!!
